Egg muffins

Scrambled, boiled, fried: you can do all sorts of things with eggs. The children of bso Mirakel turn them into egg muffins. Delicious with spinach and tomatoes. Bake along!

What do you need to make 6 muffins?

  • 4 eggs
  • dash of cream or milk
  • handful of spinach
  • 4 cherry tomatoes
  • handful of grated cheese
  • salt and pepper
  • muffin baking tin
  • optional: silicone muffin moulds

How to make the egg muffins?

  • Preheat the oven to 180 degrees.
  • Grease the muffin tin or silicone muffin moulds.
  • Spread some grated cheese over the bottom of the mould.
  • Finely chop the spinach and cut the cherry tomatoes into quarters.
  • Divide the spinach and tomatoes over the mould.
  • Beat the eggs lightly with a dash of cream and season with plenty of salt and pepper.
  • Divide the mixture among the moulds. Fill each mould about 3/4 full with egg.
  • Bake the egg muffins in the oven for 20 minutes. The muffins get very tall at first and collapse after baking. Fortunately, they still taste really good afterwards!
